Foreign immigrants and the Dutch at table between 1945 and 1985. Bridging or widening the gap? This article deals with changing ways of cooking and eating amongst the Dutch and foreign migrants in the Netherlands. They are described as established and outsiders. Foodways are seen as giving possible clues at their mutual relationship. The rising popularity of immigrant cuisines in the Netherlands since worldwar II is described, while attention is paid to the immigrant side of the table at the same time. In view of the wellknown thesis on the extreme tenacity of traditional dishes, the question is posed how changes in their diet evolve. The investigation, which has an exploring character, concentrates on (Chinese) Indonesian, Italian and Greek cuisines. Ways of adaptation reveal a growing similarity of immigrant and Dutch eating habits which is considered an example of the process of diminishing contrasts and increasing varieties, also known in other cultural and social fields. Finally, consequences of this development for possible changes in the relationship of both groups are discussed.
