Samenvatting

A small excavation in 1990-1991 in a redoubt of the Coevorden fortress (province of Drenthe) brought to light 81 animal remains, which were studied for this paper. The soldiers who defended the redoubt ate beef, mutton, pork, domestic goose and mussels. No luxury food, such as game and oysters, was eaten by the soldiers. The animal remains confirm the low status of the soldiers encamped in the redoubt.
